Aunty Betty's Yummy Mango Fruit Cake

  • Ingredients:

    425g can of mango slices in natural juice

    500g mixed fruit

    Half cup water

    One and a half tsps. bicarb soda

    One and a half cups S.R. Flour

    2 eggs (lightly beaten)

     

    Method:

    Preheat oven to 160 degrees C

    Grease a 15cm x 25cm loaf pan and line base and sides with baking paper

    Combine undrained mango slices, mixed fruit and water in a large bowl

    Bring to boil, then simmer uncovered for 1 minute - set aside to cool

    Stir in combined sifted flour and bicarb soda

    Add eggs and mix well

    Pour into prepared loaf pan

    Bake for approx. 60 minutes or until cooked when tested

    Leave cake in the pan to cool
