Jane's Kiddies Delight Slice (Popular with Adults too!!)

  • Ingredients:

    BASE:

    2 Cups S.R. Flour

2 Cups slightly crushed Corn Flakes

    2 Tablespoons Cocoa

    1 Cup Caster Sugar

    4 Tablespoons Golden Syrup

    250g Butter

    4 Tablespoons Desiccated Coconut

    ICING:

    1 Cup Icing Sugar

    1 Tablespoon Cocoa

    1 Teaspoon soft Butter

    1 Tablespoon boiling water

Quarter Teaspoon Lemon Juice (more if needed to make a spreading consistency - water can be substituted for lemon juice if preferred)

    100's & 1000's or Coconut for decoration **

    METHOD:

    Preheat oven to 180 degrees C (160 degrees fan-forced)

Grease a 24cm x 29cm laming tin and line with baking paper

Add the dry ingredients together and stir to combine

Melt the butter and golden syrup together in a small pot over low heat

Combine the wet mixture with the dry ingredients and stir until combined

Press the mixture into the pan and smooth/press down with a flat bottomed glass or the back of a metal spoon until it is smooth and flat

Bake for 20 to 25 minutes.  (the longer time will ensure give a crunchier slice, the shorter time will produce a chewier result)

Remove from the oven and allow to cool slightly in the tin.

Whilst the slice is cooling, make the icing.

    TO MAKE THE ICING:

Sift the icing sugar and the cocoa and add the soft butter, lemon juice and water and mix well

Ice the slice and sprinkle with 100's & 1000's for the kids or ** coconut for the big kids

When the slice is almost cold and the icing has set, cut it into squares.

Be Warned - this slice will be very popular so maybe you will need to make a double quantity.
