Orange and Sultana Cakes

  • Its the start of the school year and simple yet delicious lunch box treats are always a must for making the kids feel special.  This yummy recipe, c/o Taste.com.au is so easy to make, the kids could do it themselves!  Just try to stop at one!

    Ingredients: 

    125g butter, softened

    3/4 cup brown sugar

    1 tspn finely grated orange rind

    2 eggs

    1 1/2 cups wholemeal self-raising flour

    3/4 cup orange juice

    1/2 cup sultanas

     

    Method: 

    Preheat oven to 180C/160fan forced.  Line 2 x 24-hole mini muffin/cupcake pans with paper cases.

    Using an electric mixer, beat butter, sugar and oragne rind until light and fluffy.  Add eggs one at a time, beating until just combined.  Stir in flour, orange juice and sultanas.

    Spoon into prepared pan holes (it ilar can be easier to place mixture into a pipping bag or similar and pipping into the cases as they are quite small)

    Bake for 15-20 minutes or until a skewer inserted in the centre of 1 comes out clean.  Stand in pan for 5 minutes, then transfer to a wire rack to cool.
