Apple, Date & Cinnamon Muffins with Maple Oats

  • Perfect for a sunny Sunday's afternoon tea, a lunch box filler for the kids or a mid morning snack.

    Ingredients:

    2 cups wholemeal flour

    2 tspns baking powder

    2 1/2 tspns cinnamon

    3/4 cup caster sugar

    1 cup rolled oats

    1/2 cup milk

    2 eggs

    1/2 cup maple syrup, plus extra for drizzling

    1/3 cup vegetable oil

    2 small green apples, cored amd grated

    1 cup chopped dates

    Method:

    Preheat oven to 180degrees

    Place flour, baking powder, 2 tspns cinnamon, sugar and 1/2 cup of oats in a bowl and stir to combine.

    Make a well in centre, add milk, eggs, 1/3 cup maple syrup, oil, apple and dates and stir until just combined. 

    Spoon the mixture into  6 x 3/4 cup capacity tins lined with muffin cases.

    Place the remaining 1/2 tspn of cinnamon, 1/2 cup oats and 2 tblspn of maple syrup in a bowl and mix to combine.

    Top the muffins with the oat mixture and bake for 35-40 mins or until cooked when tested with a skewer.

    Drizzle with the extra maple syrup to serve.
