Another favourite from receptionist Kaye's recipes, this Apple Cake is perfect for that afternoon pick-me-up.
2 large Granny Smith apples
1 1/2 cups plain flour
3/4 cups caster sugar
1 tspn bicarb soda
1/2 tspn cinnamon
1 cup of craisins OR sultanas OR chopped dried apricots OR nuts
Melt butter and allow to cool slightly.
Peel and chop apple into smallish pieces into a medium/large bowl
Stir sugar into apples
Beat egg with a fork into the cooled melted butter and add to apple mix
Sift in flour, bicarb soda, cinnamon and craisins or whatever you decide to use and mix together well.
Spoon into a loaf or square tin and bake at 170degrees for approx. 45min or until skewer comes out clean.
